This may become one of your favourite sandwiches to bring to work….
- 1 large Whole Wheat middle-Eastern-style pita (a thin, flat pita)*
- 1 grated carrot
- 2 tablespoons chopped parsley (optional)
- hot sauce
Spread hummus on pita. Sprinkle with carrots and parsley. Drizzle with some hot sauce. Roll up pita, cut in half and wrap tightly in plastic wrap.
*a large tortilla could also be used.
You could also make little Hummus and Carrot appetizers. Just top a pita crisp with a spoonful of hummus and a small mound of grated carrot. Garnish with a couple of drops of hot sauce and a sprinkle of finishing salt.
