K2 Milling

K2 Milling is a milling company, located in Tottenham Ontario,  that produces amazing artisanal flour!  If you’ve never used artisanal flour before, you’re sure to notice how much better quality your baked goods turn out to be!

They are a truly local producer.  On their blog, they suggest that if you don’t live within the 167km of their mill, where their product is available,  buy flour from another mill!  When do you ever hear that from a business?

What makes K2 special?  According to Mark Hayhoe, its owner, k2 Milling is artisanal due to it’s size and nature of milling. They can produce ultrafine whole grain flour in a single pass from grain that is grown locally to the mill. The broad capability of milling many different grains, on their own or as an assemblage, is another unique feature of the mill.

Here are a couple of flours they produce:

Upper Canada Multigrain Artisanal Flour.  This mulitgrain flour is milled from open pollinated heritage corn, winter rye, spring wheat and oats.

It can be used straight to make cookies, muffins, biscuits, pancakes, waffles and crackers. For baking bread it is wise to blend up to 50% with RED TAIL bread flour.

Red Tail Bread Flour.    Mark, from K2 says that  “Our RED TAIL bread flour is like a white unbleached bread flour except it is slightly darker due to only one sifting.  Fibre is higher and I actually call it the k2ompromise flour. It is exactly halfway in between a whole grain flour and an industrial white flour. ”

Use this flour in place of white flour in your favorite recipes.

Red Fife Flour. Red fife is the original grain brought over from Scotland to North America back in the pioneer days.  The conventional wheats we all know today were developed from this ancient strain.  It is dense, heavy, nutty and yes it does have a slightly red tinge to it.
