At The Culinarium Cupboard Cooking School we're setting out to teach all you passionate eaters, culinary skills to share and savour for lifetime of sustainable eating.

In our cooking classes we go back to basics. We feature good ingredients and simple flavours that when crafted with skill, become more than their individual parts...they become superbly delicious.

The Culinarium Cupboard is a delicious partnership between Angelo Bean - Artisan Sausage Maker, Jose Arato - Mediterranean Caterer and Kathleen Mackintosh - Our Local Food Maven. It's where we come to play in the kitchen, meet like minded folks, share in each other's knowledge and expertise and create some darn fine food!

Nothing tastes better than a meal prepared with love and care. And with the right skills a gourmet meal is never farther away than your very own pantry. In our cooking classes we'll show you how to cook through the seasons with ingredients from around the province and techniques from around the world. You’ll be amazed at the multitude of menus you’ll have at your fingertips.

Homemade Pasta 101

Location: Iprinia Kitchens 650 Mount Pleasant Road

Join our favourite Italian pasta master Angelo Bean for a fun evening of creating your own pasta from scratch. Angelo will show you the old school way of making pasta. Come prepared for hands-on work and to have some fun with a rolling pin in this hands on class. Once the pasta is made we’ll all sit down to a delicious Italian meal using your perfect pasta creations.

Sensational Sausage

Location: Iprinia Kitchens 650 Mount Pleasant Road

Artisan sausage producer and avid locavore Angelo Bean will show us how to create our own homemade sausage. From fresh meat, grinding and stuffing the casings he’ll work with you side by side to create a delicious, artisan sausage. Once the sausages are made we’ll cook some up and “stuff” ourselves over the dinner table on the fruits of our labour.

Phyllo pastry is a staple in so many Mediterranean cuisines. From Spain to Morocco, Greece to Turkey this versatile pastry is crafted into delicious tapas, main dishes and desserts. While the flavour combinations vary between countries, and range from sweet to savoury, the technique to working with Phyllo spans the cultures. Join Chef, Jose Arato, to explore the delicious possibilities you can craft with this truly versatile ingredient – no pantry or party is complete without it.

Secrets of Salumi: Techniques & Tasting

Delve into the art and science of Salumi with Artisan Sausage Maker, Angelo Bean on this tutored tasting of traditional Italian Salumi. From pancetta, to prosciutto to salami and more, Italians have been using salt and time to cure pork for generations with delicious results. Angelo will discuss the fundamental methods passed on from family to family and explore similar products throughout other cultures. Enjoy a night of enlightened eating & education, sampling wine and appetizers inspired by the salumi greats and learn to create your own salumi.

These small bites, many of which are make ahead dishes, are perfect for any style of entertaining, festive holidays or even to host your own Spanish Tapas party. Jose will share with you a variety of recipes, using specific techniques, utensils and ingredients essential to creating the perfect Tapas experience for your guests.

Risotto for all Seasons

Good food starts with good ingredients. We’ll teach you to make the perfect risotto using Carnaroli and Vialone Nano organic rice varieties imported from Italy. We learned the non-stir method directly from Gabriele Ferron and we’ll teach it to you. No longer will you consider risotto a daunting time consuming task. We’ll show you some fabulous flavour combinations to delight your palette throughout the four seasons.
